Good morning fish shoppers! Moving into the weekend we are going to be rolling in a ton of wild seasonal specials as well as tasty farmed vittles from every wet place on the planet.
Rhode
Island has been producing some good results this week. We will have limited
numbers of Bluefish and Jumbo Fluke from the Rhode Island Sound waters. Both
have been looking fantabulous with pricing guaranteed to leave some money in
your pockets. We should also be seeing new shipments of 2/4# Wild Stripers from
the Ocean City vessels. We are getting offers on Jumbo Stripers but the price is
at a premium so if this tickles your fishbone be sure to call your rep early in
the week to preorder. Master Guru Carl is expecting jumbo pricing to ease up
next week and that’s when he’ll use his cat like agility to pounce on the big
boys. The Master snagged up a good amount of Florida Brown Marbled Grouper for
weekend specials. Brown Marbled Grouper is a unique off shore specie that hunts
in waters over 60 feet deep near reefs and drop off walls feeding on a diet
mainly of shellfish. These conditions provide the animal with a meatier fillet,
better yield and distinctive sweet lobster or shrimp like finish on the palate.
Be sure to call early before these sell out.
Gulf supplies remain strong. We have limited numbers of Honduran Queen Snapper available along with new deliveries of Escolar, Wahoo and 1-2# Suriname Snapper. Mahi season is in full swing and we are bringing in some gorgeous fish from Panamanian waters. These warm water beauties have been coming in daily with firm resilient meat. Pricing on Mahi is very attractive, making this a great option for your winter menu!
The 2008 Wild Alaskan Halibut Season ended last Saturday and Joe bought a ton of the final offerings. We have fresh on hand now and will be switching to refreshed when those supplies run out. Be sure to contact your supreme Rep on availability.
Great Lakes fishing is slowing down as fisherman get close to filling their catch quotas. Lake water temperatures continue to drop making certain species scatter. We will be seeing this effect on White Lake Perch and White Bass from Lake Erie initially. Lake Champlain Crappie and Sunfish which usually have good fall harvests have been weak and are now close to being over so order these beautiful freshwater delicacies while you still can! Once ice is sufficient to support the weight of fishing we should get some fish back in the system but at a reduced quantity compared to summer. River fish is fairing better but will be experiencing some of the same ice issues as we get deeper into winter.
We
also have a great variety of eco friendly farmed aquaculture species on hand for
weekend specials. Hawaiian Kona Kampachi, Tasmanian Ocean Trout, Belize Cobia,
Cypress Farms Striped Bass from Mississippi and California White Sturgeon are
all raised using environmentally responsible farming techniques providing

*Northumberland – Northumberland Strait, PEI Canada
The Northumberland Straits of Prince Edward Island provide these medium sized choice oysters with a beautiful plump meat with a creamy slightly salty start and sweet citrus finish.
*Lasqueti Island – Lasqueti Island, British Columbia Canada
The Lasqueti Island BCs are a favorite among wine lovers for the adaptability of pairings. Lasqueti Island have a beautiful deep cupped shell with clean crisp meat that has mild salinity from start to finish with mild mineral undertones.
*Indian Creek – Malpeque Bay, PEI Canada
Our Indian Creek oysters are a Supreme Lobster exclusive product. Hand harvested from the cold, briny waters of Northwestern Prince Edward Island, the Indian Points are graded out as a choice variety, and as such, are deeply cupped and uniformly sized at roughly three and a half inches in length. Flavor profile of the Indian Creek leans toward the moderate to highly saline.

A delightful oyster that has a deep cup and fluted shell with a wonderfully rich, almost buttery taste. ***My personal favorite of the new offerings!
*Belon – Acadian Peninsula
These hard to find “European Flat” oyster are grown in select sub tidal areas in the pristine waters of New Brunswick, Canada. These distinctive oysters are known for their round flat shells and intense mineral finish.
*Beau Soleil Miramichi Bay, New Brunswick
Cultivated on suspension lines in the cold waters off the eastern coasts of New Brunswick, these small cocktail oysters have a surprisingly high meat yield with a crisp briny flavor finishing off with melon undertones, reinforcing the theory that great things can come in small packages!
*Salvation Cove Salvation Cove, PEI Canada
Harvested daily from the icy waters of the Northwestern region of Prince Edward Island, Canada. This medium sized North Atlantic Oyster provides a nice introduction of salinity, which tapers into a clean refreshing finish. These have been and office favorite and are a great option for beginners.
*Chefs Creek - British Columbia, Canada
Chef Creek flows into Deep Bay in Baynes Sound on the eastern coast of Vancouver Island, the home of the Chef Creek Oyster. This is a nicely cupped oyster which has a mild salty, sweet taste.
