Our fish are true, open-ocean raised striped bass, not to be confused with the hybrid species currently farmed in fresh water ponds and lakes. Known in the wild as rock fish or stripers, they are large fish with black stripes running along their silvery metallic sides. Adult fish grow 1 – 3 foot in length and are harvested between 1 – 5 pounds.
Like many oceanfish, our striped bass is high in omega-3 fatty acids, offering significant health benefits. This premium white fish is prized for its sweet, mild flavor and firm texture.
Ocean Raised
Farmed Bass ("suzuki" in sushi) or striped bass caught with hooks and lines in the U.S. Atlantic is a "Best Choice." Striped bass caught with gillnets or pound nets in the U.S. Atlantic is a "Good Alternative."
This selection is outstanding in the kitchen. Although often served as "Suzuki Sashimi" or Crudo, these fish are incredible when prepared in a heavy pan, skin side down allowing the fat to render out, crisping the delicious skin to an almost chip-like brittleness. The thin, crispy fattiness of the skin, once rendered is an excellent contrast to the supple elegance of the white delicate flesh.
These fish are ocean raised in paradise, off the coasts of a small private island called Isla Todos Santos. New to the market, this is quickly gaining recognition as one of the best tasting ingredients in modern cuisine!
