Denman Island is situated on the eastern coast of Vancouver Island, British Columbia. It is a well known region for oyster cultivation with names like Fanny Bay, Chef’s Creek, and Deep Bay being cultivated in the same region.

They are started as hatchery spat and suspended from trays until they reach a large enough size to transfer to the Island’s beaches to finish their grown-out, being nourished by the waters and tossed by the tides of the Strait of Georgia. The result is that Denman Island oysters have thick, hard shells and full meats with a clean, sweet flavor, a medium brininess and a watermelon finish.
