The geoduck (pronounced gooey-duck) is the largest member of the clam family. They grow to an average weight of over 2 pounds! The meaty siphon is the edible part of the clam and it is considered a delicacy around the world. The state of Washington is the source for about half the world supply. They are hand harvested by divers so they are very difficult to get on a consistent basis. Pre-Orders are required to secure this for your needs!

Substitutions: Abalone, Surf Clam

To prepare for use, cut the siphon from the body meat and split it in half lengthwise. Cut each piece into paper-thin slices. Serve raw as sashimi or cook quickly in a stir fry or hot pot. Cooking toughens the meat rapidly. A quick blanching in boiling water or sauce gives best results.
