Baja Seas' open ocean grow out facility is strategically situated in Magdalena Bay, a crystalline body of water off Baja California. Known for its marine life diversity and perfect conditions for yellowtail (Seriola lalandi), it is the ideal location to raise Baja Seas Hiramasa. Our additional state-of-the-art 26,909-square-foot hatchery, Ocean Baja Labs, lies south of Ensenada in Baja. Our hatchery allows us to produce 2 million fingerlings per year, and its close proximity to our grow-out facility ensures a low carbon transportation-footprint.
The broodstock for Baja Seas Hiramasa originated from fingerlings provided by Hubbs-Sea World Research Institute. The transfer of these fingerlings to Baja Seas' ocean pens launched the first grow-out cycle of Baja Seas Hiramasa. It also facilitated Ocean Baja Labs' production of future seed, ensuring a consistent and fully traceable "egg to plate" product for consumers.
A great addition to any menu, Baja Seas Yellowtail Hiramasa provides a luscious flavor profile with a richly firm texture. Although perfect for sushi, sashimi and crudos, it's also excellent with sous vide, braised, direct heat and char applications that allow the supple fat content to pair with new seasonal produce. Often used in the same applications as Hamachi and Kanpachi, this versatile continues to garner praise from some of North America's most talented Chefs.
