Midnight Bay Oysters are beach cultivated in the waters of Hood Canal in Puget Sound, Washington. Beach cultivation gives them hard shells which every oyster shucker will appreciate. They generally are harvested at about 4″ in size and are great for the BBQ or on the half shell if you enjoy a larger raw oyster. They have plump meats, a beautiful black mantle, a light mineral flavor, medium brininess and a buttery finish.
