Description

Nootka Sound

Source: Chef’s Resource

Nootka Sound Oysters are among the most remotely cultured oysters in North America. They are raised on the western side of Vancouver Island about two-thirds of the way up the coastline in an area which is rumored to have little more than a single logging road for access. The region is a series of fjords and known for its coastal rain forests, abundant wildlife, and sparseness of humankind.

The information I have says that they are a Beach Cultured oyster and the photo here supports that. But The Oyster Guide says that the oysters he received appeared to be Tray Suspended and if so then they would look like the oysters posted on Oysterater (although they say the oysters are Beach Grown, the appearance is clearly Tray Suspended). I suspect that they were originally beach cultured and in more recent years are being tray cultivated.
