Satori

Satori translates to "Sudden glimpse and enlightenment". Satoris are beach hardened and harvested when they reach 2 inches in size. Hollie & Greg start growing these oysters in deep water and tumble them to shape the shells forming an upward growing deep cup. They are then transferred to the beach to strengthen the Oysters for a strong shelf life and hardened shell.

Harvest Location: Baynes Sound, Vancouver Island, BC, Canada
Flavor Profile: Bright taste, moderately briny flavor that ending with a hint of cucumber.
